Peanut Butter + Honey “Ice Cream”

Makes ~ 2 cups

1 1/2 peeled medium bananas, sliced into coins and frozen until solid (~1-2 hours)
3 tablespoons peanut butter
2 teaspoons honey


Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in peanut butter and honey, and transfer to a freezer container and freeze until solid.



Try to use ripe bananas, as they have more flavour than unripe ones once frozen.  The banana coins after being in the freezer for 2 hours.  They should be hard when you tap it with a metal spoon.

After blending all the ingredients, it should have a goopy consistency.  Mine wasn’t quite as thick as soft-serve ice cream but it didn’t seem to matter.

I took it out of the freezer after ~2 hours.  It was mostly frozen except for the very middle which was just a little soft.  Still delicious though! I think I might prefer it to actual ice cream because it’s not as rich = you can eat more!

The website has many more flavour variations for the recipe; I’m definitely going to try more — I’d love to know if any of you come up with your own flavour combinations 🙂
